Our Food Philosophy
Danielle's cooking will keep you fueled and gastronomically satisfied. After a satisfying day of sea kayaking, meals served on our trips are the kind of food that hits that spot that everyone mentions when their meal has hit 'the spot'. Danielle does the grocery shopping, prepares the menu and does all the baking ahead, leaving the guides with just enough preparation so that the food is fresh without sacrificing kayaking time.
Danielle was born and raised in Campbell River, BC and is the oldest child of four. She has that 'taking care of you' kind of way about her in the kitchen and she does much running around shopping from grocery stores to specialty shops to get the best organic produce, and tailoring the menu to fit our kayakers' food needs. The menu does change and there is always room for altering and creative infusion.

Our menu has, what all our bellies crave on the ocean, local wild sockeye salmon. Our salmon is caught by our friends who live just around the corner, a long time Quadra Island, BC fishing family. The appropriate term for this dinner is not so much a meal but a culinary experience. The fish is done up just right with lemon and dill or orange and ginger.
Our meals always contain much produce, a treat when eating an outdoor menu. Breakfasts are warm and hearty, always with dairy for dairy eaters and soy or rice milk for those who are not. Shortcuts are not a part of a complete diet, and when we make pancakes, the ingredients are organic as much as possible and maple syrup is nothing but the real stuff. Danielle includes scrumptious baking, including her famous carrot cake, or chocolate zucchini cake and a multitude of muffins.
Lunches are simple and delectable, particularly a pasta salad that really is the Mona Lisa of pasta salads with steamed broccoli, zucchini, olives, feta cheese and a tasty homemade dressing.

Our coffee, some people would be unconscious without it and we wouldn't want you to miss a thing. We use only Aroma coffee, roasted right here on Quadra by Peter and Helene making it truly hot magic. We use only organic, fair trade, shade grown beans.

Our seafood We only use Local sea food on our tours. We are sure to use fish and shell fish that are caught or farmed in a sustainable way by small family run fishing businesses. The Photo on the left is of Rena Patrick bringing us a load of spot prawns. By day Rena supplies our guests with a summer worth of locally caught prawns, by night she can be found at Karaoke night at the Herriot Bay Inn singing cover songs with a West Coast twist to the lyrics "Hey Momma don't let your babies grow up to be clam diggers....."

Quadra's bakery, Lovin' Oven II, keeps us spoiled with creative breads, like the Orange Cranberry Loaf or the Multi grain Fruit and Nut.
Please let us know what you cannot have, and what you can have, and we'll do our best to find the appropriate sweeteners, grains, proteins or dairy alternatives so you don't have to lose your well-earned sleep being bothered with food-fright, or sore bellies.
